Wild Rice and Celery Salad

This delicious, healthy salad has lots of texture and color. Use your favorite vinaigrette dressing and add a note of sweetness with your choice of dried fruit; we like dried cranberries, raisins or even dried tart cherries. Be sure to use the celery leaves, if you have them, as they're full of flavor.

Ingredients

3 cups

cooked wild rice (see note below)

1 ½ cups

Earthbound Farm Organic Celery or Celery Hearts (thinly sliced)

½ cup

scallions (thinly sliced)

⅓ cup

fresh celery leaves or flat leaf parsley (chopped)

⅔ cup

pecan pieces (toasted)

½ cup

dried tart cherries, Earthbound Farm Organic Dried Cranberries, or Earthbound Farm Organic Raisins

½ cup

your favorite vinagrette

Salf and freshly ground black pepper to taste

Directions

Place the wild rice in a large bowl and add the celery, scallions, celery leaves, pecans, and dried fruit. Stir to combine, then add the vinaigrette, tossing to coat the mixture. Season to taste with salt and pepper. The salad can be refrigerated, covered, for up to 2 days.

Note: To obtain 3 cups of cooked wild rice, cook 1 cup of raw wild rice in 4 cups of water over medium-low heat until the water is absorbed and the rice is just tender.
