Whipped Butternut Purée
Butternut is a staple of the fall and winter months; its brilliant color, sweet flavor and versatility make it a favorite vegetable. This rich, elegant purée makes a terrific holiday accompaniment to any meat, especially pork and poultry — and it can stand in for mashed potatoes if you’re looking for a lighter choice.
This recipe makes about 4 cups. If you have any butternut purée left over from dinner, it reheats beautifully in the microwave and tastes marvelous the next day!
Ingredients
| 4 pounds | Earthbound Farm Organic Butternut Squash (peeled, seeded and cut into 1-inch chunks) |
| 1/4 cup | mascarpone cheese |
| 2 tablespoons | light brown sugar (or to taste) |
| freshly grated nutmeg (to taste) | |
| salt (to taste) |
Directions
Place the butternut in a steamer insert and steam over high heat until very tender, about 20 minutes. (It may be necessary to do this in batches.)
Let the squash cool slightly, then transfer to a food mill fitted with the finest screen. Pass through the food mill. If you want a perfectly smooth purée, next press the butternut through a fine mesh sieve.
Add the mascarpone and brown sugar, and whisk until smooth. Season with the nutmeg and salt to taste. To serve, reheat over medium heat until hot.
