Love ice cream but would rather avoid the calories and fat, try frozen yogurt!
Fresh berries add flavor and natural sweetness to this refreshing recipe...top with sliced strawberries, if you like.
| 2 1/2 cups | chopped fresh strawberries |
| 1/3 cup | Sugar |
| 1/4 cup | light corn syrup |
| 1 cup | plain nonfat yogurt |
| 1 cup | buttermilk |
| 1 tablespoon | fresh lemon juice |
Place the strawberries, sugar, corn syrup and 1/2 cup of water in a medium-sized saucepan and bring the mixture to a simmer over medium heat. Cook, stirring frequently, until the berries are very soft, about 8 minutes.
Transfer the mixture to a sieve set over a clean bowl. Strain the mixture, pressing on the solids to extract all of the syrup. Add the lemon juice to the syrup and refrigerate the mixture until it's very cold.
Combine the yogurt and buttermilk in a large bowl. Add the strawberry syrup and whisk to blend. Process the yogurt in an ice cream maker according to the manufacturer’s instructions.
Transfer the yogurt to a clean container, press a piece of plastic wrap directly against the surface, and freeze until firm. Before serving, let the yogurt rest at room temperature for 15 minutes or so to soften slightly if it’s frozen solid.
