Strawberries are a delightful addition to spring and summer salads, contributing a delicious sweet-tart note and of course, beautiful color.
Here we've combined crunchy romaine and fresh basil, and then tossed the greens in a simple balsamic vinaigrette. Strawberries and balsamic are a match made in heaven, so don't be surprised if this delicious salad becomes a favorite!
| 1/2 cup | extra-virgin olive oil |
| 1/4 cup | balsamic vinaigrette |
| 2 teaspoons | agave syrup |
| 1 teaspoon | salt |
| 1 dash | Freshly ground black pepper (to taste) |
| 8 cups | Earthbound Farm Organic Romaine Hearts (about 3 hearts, torn into bite-size pieces) |
| 1/2 cup | fresh basil leaves (cut into thin ribbons or chiffonade) |
| 2 large | shallots (very thinly sliced) |
| 2 cups | Earthbound Farm Organic Strawberries (quartered) |
Place the oil, vinegar, agave, salt and pepper in a large salad bowl and whisk to blend.
Just before serving, add the romaine and basil, and toss to coat the greens. Add the shallots and strawberries, then toss again. Divide the salad among serving plates or arrange on a large platter and serve immediately.
