This recipe is delicious and saucy and was good with spinach penne but would be excellent with rice as well to soak up all the yummy sauce. This was great reheated the next day with the noodles. Moist and yummy! [originally posted on EBFarm.com 8/17/09]

Delicious Asian inspired dish. Not sure why the vegetable process is broken up into 3 parts ( cook the zuccini, take it out, cook broccoli, take it out, cook peppers, take it out). I'm curious as to why this was part of the instructions as opposed to cooking all vegetables at once. Also, we used Soba Noodles, which were not thick enough to soak up sauce. I would suggest using rice.

This is an excellent recipe! My husband and I both loved it! I served it over basmati rice and sprinkled crunchy chow mein noodles on top, instead of cashews. I will definitely make this again!
