Serve this tasty salad in the autumn when new crop walnuts and apples are in their prime. The contrast of tastes and textures is what makes this salad successful: the salt of the bacon is mellowed by the sweet juiciness of the apple, and the mild pungency of the Stilton adds earthy creaminess.
|2 tablespoons||balsamic vinegar|
|1 teaspoon||Dijon mustard|
|1 teaspoon||finely minced shallots|
|1/8 teaspoon||freshly ground pepper|
|3 tablespoons||walnut oil|
|3 tablespoons||extra-virgin olive oil|
|4 ounces||Earthbound Farm Organic Spring Mix|
|1/2 cup||toasted walnut pieces|
|4||strips thick-cut bacon (diced and cooked until crispy)|
|2 ounces||Stilton cheese (or other blue cheese) (crumbled)|
|1 small||organic Gala and Fuji apple (thinly sliced)|
Combine the vinaigrette ingredients in a glass jar and shake vigorously to combine.
Place the greens in a salad bowl and add half of the vinaigrette. Toss to coat the leaves, adding more dressing sparingly, as needed.
Divide the greens among 4 chilled salad plates and sprinkle each serving with some of the nuts, bacon, and cheese. Garnish with the apple slices and serve immediately.
