Spinach Yogurt Dip

Earthbound Farm co-founder Myra Goodman always says that people are surprised that her kids have always loved vegetables.

"I've found that almost every child will eat their veggies if they're presented in a fun and interesting way," she says. "Kids love to dip things, and a platter of assorted vegetables served with a tasty dip can keep them happily munching for a long time, eating tons of vitamins, minerals and healthy fiber."

Try arranging a big, colorful assortment of veggies on a platter: cut carrots and cucumbers into sticks, circles and half moons; slice sweet bell peppers of different colors into strips and squares; pile up different shapes and colors of tiny cherry and grape tomatoes — anything you like. Then add a generous bowl of this tasty, easy-to-make dip. Even veggie-avoiders will be drawn in for happy, HEALTHY munching!

Ingredients

1 cup

tightly packed Earthbound Farm Organic Baby Spinach

1 Tbsp

chopped fresh Italian parsley

1 tsp

chopped Earthbound Farm Organic Garlic

½ tsp

salt

1 ½ tsp

fresh lemon juice

¾ cup

plain organic yogurt (regular or Greek)

2 Tbsp

extra-virgin olive oil

Directions

Place all ingredients in the bowl of a food processor and blend until smooth.


Note: this recipe yields about 2 generous servings, but you'll probably want to double the recipe (or more) once you get a taste for this delicious dip!
