This light, flavorful dressing beautifully complements our tender organic baby spinach. Julienned cucumber, toasted pumpkin or sunflower seeds, almonds, or tangerine segments work well as optional garnishes.
| 2 tablespoons | unseasoned rice vinegar |
| 2 tablespoons | soy sauce |
| 1/4 cup | sesame oil |
| 1/4 cup | canola oil |
| 2 tablespoons | honey |
| 1/4 teaspoon | Asian chili sauce |
| 1 tablespoon | grated fresh ginger root |
| 2 teaspoons | Sesame seeds |
| 5 ounces | Earthbound Farm Organic Baby Spinach |
Combine all vinaigrette ingredients in a glass jar and shake vigorously to emulsify.
Place the spinach in a large bowl. Add about 1/4 cup of the dressing and toss to coat the leaves lightly. Add more as desired. Extra dressing may be refrigerated up to one month.
