Inspired by the 50's classic Green Goddess, the dressing is the star of this salad. It's a delicious dipping sauce for shrimp or veggies, too.
If you find yourself with leftover dressing, it will keep in the refrigerator (tightly sealed) for up to 3 days.
|2||anchovies (2 teaspoons anchovy paste)|
|2||Earthbound Farm Organic Green Onions (chopped)|
|1 clove||Earthbound Farm Organic Garlic (peeled)|
|2 tablespoons||fresh tarragon leaves|
|2 tablespoons||fresh chopped chives|
|2 tablespoons||Earthbound Farm Organic Italian Parsley (leaves only)|
|Zest of 1 Earthbound Farm Organic Lemon|
|Juice of 1/2 Earthbound Farm Organic Lemon|
|1 tablespoon||tarragon or white wine vinegar|
|1 small||ripe Earthbound Farm Organic Avocado|
|1/4 cup||sour cream or plain yogurt|
|Salt and freshly ground pepper (to taste)|
|10 ounces||Earthbound Farm Organic Romaine Salad Blend|
|1/2 cup||halved Earthbound Farm Organic Cherry Tomatoes|
|1/3 cup||thinly sliced radishes|
|1/2||Earthbound Farm Organic Cucumber (diced)|
Combine the first 10 ingredients (anchovies through avocado) in a food processor and pulse to chop. Add the mayonnaise and sour cream, and purée until smooth. Season to taste with salt and pepper.
Place the greens in a large bowl. Add the tomatoes, radishes, cucumbers and dressing. Toss to coat and serve immediately.
