Inspired by the 50's classic Green Goddess, the dressing is the star of this salad. It's a delicious dipping sauce for shrimp or veggies, too.
If you find yourself with leftover dressing, it will keep in the refrigerator (tightly sealed) for up to 3 days.
| 2 | anchovies (2 teaspoons anchovy paste) |
| 2 | Earthbound Farm Organic Green Onions (chopped) |
| 1 clove | Earthbound Farm Organic Garlic (peeled) |
| 2 tablespoons | fresh tarragon leaves |
| 2 tablespoons | fresh chopped chives |
| 2 tablespoons | Earthbound Farm Organic Italian Parsley (leaves only) |
| Zest of 1 Earthbound Farm Organic Lemon | |
| Juice of 1/2 Earthbound Farm Organic Lemon | |
| 1 tablespoon | tarragon or white wine vinegar |
| 1 small | ripe Earthbound Farm Organic Avocado |
| 1/4 cup | mayonnaise |
| 1/4 cup | sour cream or plain yogurt |
| Salt and freshly ground pepper (to taste) | |
| 10 ounces | Earthbound Farm Organic Romaine Salad Blend |
| 1/2 cup | halved Earthbound Farm Organic Cherry Tomatoes |
| 1/3 cup | thinly sliced radishes |
| 1/2 | Earthbound Farm Organic Cucumber (diced) |
Combine the first 10 ingredients (anchovies through avocado) in a food processor and pulse to chop. Add the mayonnaise and sour cream, and purée until smooth. Season to taste with salt and pepper.
Place the greens in a large bowl. Add the tomatoes, radishes, cucumbers and dressing. Toss to coat and serve immediately.
