This vinaigrette was created especially for our Harvest Salad with Pomegranates, Fennel, and Figs — but it works beautifully with other kinds of salad greens, especially those with bold or exotic flavors like our Middle Eastern Salad. The bright, tangy flavor of this simple vinaigrette balances sweet and spicy notes perfectly. You'll find pomegranate vinegar and pomegranate molasses in specialty stores and Middle Eastern markets. |1/4 cup||hazelnut oil|
|1 tablespoon||pomegranate or raspberry vinegar|
|1 tablespoon||pomegranate molasses|
|2 teaspoons||fresh lemon juice|
|1 teaspoon||finely minced shallot|
|Salt and freshly ground black pepper (to taste)|
Combine the oil, vinegar, pomegranate molasses, lemon juice and shallots in a clean jar. Seal the jar tightly and shake vigorously to combine. Season with salt and pepper to taste.
The vinaigrette can be refrigerated for up to 2 weeks. Return to room temperature and shake vigorously before using.
