Luscious wedges of avocado alternate with cherry tomatoes for a gorgeous presentation. Serve this salad on a large, flat platter to show off the pretty colors and shapes of the petite lettuce leaves.
Avocado oil is buttery and rich, and it's good for you, too — here we keep the vinaigrette dressing simple so the oil isn't overwhelmed.
|1 1/2 tablespoons||white wine or champagne vinegar|
|4 1/2 tablespoons||avocado oil|
|1/4 teaspoon||dried tarragon|
|1/4 teaspoon||salt (or to taste)|
|freshly ground pepper (to taste)|
|5 ounces||Earthbound Farm Organic Petites Lettuce Leaves|
|1 cup||halved Earthbound Farm Organic Cherry Tomatoes|
|2||ripe Earthbound Farm Organic Avocados (peeled, pitted and cut into thin slices)|
To make the vinaigrette, place the vinegar, oil, tarragon, salt and pepper in a small glass jar and seal tightly. Shake vigorously to combine. Taste and adjust seasoning as desired. Set aside at room temperature.
Place the lettuce leaves in a large salad bowl and toss with two-thirds of the dressing. Transfer the greens to a large platter and arrange decoratively. Scatter the tomatoes over the salad, and then arrange the avocado slices. Drizzle more of the dressing over the salad and serve immediately.
