Pear and Roquefort Celery Sticks

Pears and blue cheese are a classic pairing. Combined here with cream cheese and pecans, they make a simple but elegant stuffing for crisp celery sticks.

Use black or red sea salt to garnish each stick; the salt accentuates the flavor and makes an attractive presentation.

whole bunch Earthbound Farm Organic Celery (trimmed, each stalk cut into 3-inch lengths)

1 tsp



ripe Earthbound Farm Organic Pear (peeled, cored and cut into 1/8-inch dice)

1 tsp

cream cheese (softened)

¾ cup

crumbled Roquefort or blue cheese (about 4 ounces)

3 Tbsp

toasted pecans (finely chopped)

Sea salt


Wash the celery sticks and dry well. Keep refrigerated until you're ready to add the filling.

Melt the butter in a skillet over medium-high heat and add the diced pear. Sauté until the liquid in the pears begins to evaporate, and then sprinkle the sugar over the fruit. Continue cooking, stirring frequently, until the pears turn golden. Remove from the heat and cool for 2 or 3 minutes.

Place the cream cheese and Roquefort (or the variety of blue cheese you're using) in a bowl and blend until smooth. Add the pears and pecans, and stir to combine.

Fill each celery stick with some of the mixture. You can pipe it from a pastry bag or use a small knife to apply the filling. Just before serving, sprinkle a few grains of sea salt on top of each celery stick, arrange on a platter, and serve at room temperature for the best flavor.
