If your kids like peanut butter, here's a simple treat they can help make and even assemble all on their own. Store-bought cookies, either peanut butter or chocolate chip, will work if there isn't time to bake them from scratch. You can substitute any flavor of ice cream between the cookies, if you like, depending on what's popular in your home!
|1 1/4 cups||peanut butter, smooth or chunky (divided)|
|1/4 cup||unsalted butter (1/2 stick softened)|
|1/2 cup||(packed) dark brown sugar|
|1/2 cup||granulated (white) sugar|
|1/2 teaspoon||pure vanilla extract|
|3/4 cup||unbleached all-purpose flour|
|1/2 cup||whole wheat pastry flour|
|1/2 teaspoon||baking powder|
|1/2 teaspoon||baking soda|
|1 pint||vanilla or chocolate ice cream (softened slightly)|
For Parents: Position a rack in the middle of the oven and preheat the oven to 375 degrees F.
For Kids (or parents): Place 1/2 cup of the peanut butter in a large bowl. Add the soft butter and the brown and white sugars and beat with a wooden spoon until the mixture is smooth. Add the egg and vanilla and beat to combine.
For Kids: In another small bowl, whisk the flours with the baking powder, baking soda, and salt. Add the flour mixture to the batter and stir until thoroughly combined.
For Kids: Shape the dough into 1-1/2 inch balls. Place on ungreased cookie sheets, spacing the balls 3 inches apart. Press the tines of a fork on top of the balls to flatten the dough, then press again with the fork to form a criss-cross pattern. If the fork sticks to the dough, dip it in flour first.
For Parents: Bake until the cookies are golden brown, 9 to 11 minutes. Transfer the pan to a wire rack and let the cookies cool completely.
For Kids: While the cookies are cooling, scoop the ice cream into a medium-size bowl. Mix the remaining 3/4 cup of peanut butter into the softened ice cream. If you are using plain ice cream (without the peanut butter), let it soften slightly before assembling the sandwiches.
For Kids: To make the ice cream sandwiches, place a small scoop of peanut butter ice cream on top of a cookie and cover with a second cookie, pressing down lightly to spread the ice cream into an even layer. Place the sandwiches on a baking tray and freeze until the ice cream is firm. Once the sandwiches are solidly frozen, wrap them individually in plastic wrap and store in the freezer until serving time.
