Fruit smoothies are delightful in the winter months when passion fruit and tangerines are in season. They're a great way to start the day (and the New Year), especially because the abundant vitamins found in these fruits help boost your immune system against seasonal colds.
Passion fruit is also sensational with bananas, so feel free to let them stand in for the mangos. Enjoy!
| 1/2 cup | Sugar |
| 1/2 cup | water |
| 1 teaspoon | vanilla bean paste (or the seeds from 1 vanilla bean) |
| 1 medium | Earthbound Farm Organic Mango (peeled and cut into 1/2-inch cubes,about 1 cup) |
| 1/3 cup | passion fruit juice or puree (fresh or frozen) |
| 1 cup | tangerine juice (preferably freshly squeezed) |
| 2 cups | cracked or crushed ice |
Place the sugar and water in a small pan and bring to a simmer over medium heat, stirring until the sugar dissolves. Add the vanilla paste and simmer for 2 minutes. Remove the pan from the heat and allow the syrup to cool to room temperature. Refrigerate until chilled.
Place the mango and the passion fruit and tangerine juices in a blender; process until the mixture is smooth. Add the chilled sugar syrup to your desired level of sweetness, and the ice, and process until smooth. Serve immediately.
