I liked the ingredients in your oatmeal, carrot and apple breakfast squares but way to much sugar and oil for me. I've pretty much eliminated sugar and fats from my healthy diet but I do use olive and canola oil in moderation. I eat avocado to make sure I get some healthy fat. I got this recipe from our local AMNW show on channel 2. I made it the next day and it is very moist and delicious. I left the coconut and 1 cup of the walnuts off of the topping. I love these squares! They are healthy and filling. I have an international student who lives with me during the school year. Mornings are not her best time, and she is usually running late. I want her to eat breakfast so these squares have been the answer! I make two batches at a time, cool, cut and freeze. She pulls one out each morning, microwaves for 30 seconds, and she is off to school eating along the way!
