Lassi is a chilled yogurt drink popular in India, where it's served in varying degrees of thickness. It can be flavored with puréed fruits, juices, and spices.
|2 cups||ripe melon, such as honeydew or cantaloupe (cubed and chilled)|
|1 tablespoon||finely minced crystallized ginger|
|2 cups||whole milk|
|3/4 cup||plain yogurt|
Place the melon and ginger in a blender and purée. Add the remaining ingredients and process until the mixture is light and frothy. Serve immediately.
