Lassi is a chilled yogurt drink popular in India, where it's served in varying degrees of thickness. It can be flavored with puréed fruits, juices, and spices.
| 2 cups | ripe melon, such as honeydew or cantaloupe (cubed and chilled) |
| 1 tablespoon | finely minced crystallized ginger |
| 2 cups | whole milk |
| 3/4 cup | plain yogurt |
| 3 tablespoons | honey |
| 6 | Ice cubes |
Place the melon and ginger in a blender and purée. Add the remaining ingredients and process until the mixture is light and frothy. Serve immediately.
