- Organic Bound
This light, fat-free dressing brings a taste of the tropics to your salads. It's also a terrific complement to chicken, duck or shrimp and can be used as a marinade, as well.
|1 large||Earthbound Farm Organic Mango (peeled, pitted and cubed)|
|1/4 cup||freshly squeezed orange juice|
|1/2 teaspoon||grated orange zest|
|2 tablespoons||fresh lime juice|
|2 tablespoons||cider vinegar|
|1 tablespoon||honey (or more to taste)|
|1 teaspoon||grated fresh ginger|
|salt and pepper to taste|
Place the mango, orange juice and zest, lime juice, vinegar, honey, and ginger in a blender or small food processor. Purée until the mixture is smooth. Season to taste with salt and pepper, and add more honey if your mangos aren't sweet. Refrigerate up to 2 days.
