Mango Lassi

Sweet and juicy mango combined with cardamom, honey, and yogurt makes a delightful breakfast drink or a lovely pick-me-up any time of day.

If you have a choice of mango varieties, choose Ataulfo or champagne mangos; their flesh is particularly sweet and not stringy.

Lassis are very popular beverages in India, where you can find just about every imaginable flavor. They're at their best when very cold, so plan on at least 30 minutes of refrigeration before serving.

Ingredients

1 cup

Earthbound Farm Organic Mango (about 1 large or two small, peeled and cubed)

1 cup

plain or honey yogurt

2 tsp

ground cardamom

6 unknown

ice cubes, cracked into small pieces

unknown

honey to taste, depending on the sweetness of the mango

2 unknown

thin mango wedges (as garnish, optional)

Directions

Place the mango, yogurt, cardamom, and ice in a blender and process until the mixture is completely smooth.

Add honey to taste and blend again for 1 minute.

Divide the lassi into two glasses and refrigerate until very cold, at least 30 minutes. Garnish with mango wedges, if desired.
