Try baby kale in this creamy, smoky baked favorite and you may never go back to another leafy green. It's a delicious change-up for holiday gatherings!
Serves 8 as a side dish.
| 2 tablespoons | olive oil |
| 3 ounces | bacon (cut into small pieces, about 2/3 cup) |
| 1/2 medium | onion (diced) |
| 10 ounces | Earthbound Farm Organic Mixed Baby Kales (2 5-ounce packages) |
| 1 teaspoon | paprika |
| 2 tablespoons | Flour |
| 1 teaspoon | salt |
| 1/4 teaspoon | black pepper |
| 3/4 cup | whole milk |
| 1/2 cup | bread crumbs (optional) |
Preheat the oven to 325 degrees F.
Heat oil in a large pot over medium heat. Add onion and bacon, stirring occasionally. When the bacon is crispy add baby kales, paprika, flour, salt and pepper. Cook until greens begin to soften, add milk, and continue cooking 5 minutes.
Place the mixture into an ovenproof baking dish and top with breadcrumbs, if using. Bake 15 minutes until the kale is bubbling and the breadcrumbs are golden brown. Serve hot.
