So they started washing and bagging a week’s worth of greens so they could have a delicious salad every night. It was an easy way to enjoy the healthy abundance of their little farm, and the greens were as fresh at the end of the week as at the start. When one day a chef cancelled his order, they washed and bagged the fresh organic spring mix to sell at retail, figuring other people might like an easier way to enjoy a fresh organic salad, too. Pre-washed packaged salads were born…and salad bowls across the country have never been the same.
