Cherry and Yogurt Ambrosia

Not too sweet or too tart, juicy cherries are in their glory when cloaked in a creamy mixture of vanilla yogurt and mini marshmallows.

Enjoy this dish any time of day or night. Serve it alongside breakfast or brunch, as a salad on butter lettuce leaves for lunch or dinner, as dessert after any meal — or even as a snack, whenever the craving hits.


1 package Earthbound Farm Frozen Organic Dark Sweet Cherries
3/4 cup vanilla Greek yogurt
1/2 cup miniature marshmallows
1 tablespoon Sugar (or to taste)
3 tablespoons shredded coconut (optional)


Place a double thickness of paper towels on a baking sheet. Empty the frozen cherries onto the towels and let stand until thawed. Pat dry. 

In a medium bowl, stir together the yogurt, marshmallows, sugar and coconut (if using). Gently stir in the cherries until just combined. Refrigerate to blend the flavors for at least 1 hour or (covered) up to 8 hours.
