In this (egg-free) version of the classic Caesar dressing, our organic purées reduce the prep time and boost the flavor — so you may never go back to a bottled dressing again!
This flavorful, creamy dressing works beautifully as a dip for veggies, too. For a yummy entrée-style salad variation, add a bit of chicken, shrimp, salami or bacon (or a combo).
| 1 tablespoon | Earthbound Farm Crushed Roasted Garlic Organic Purée |
| 2 teaspoons | Dijon mustard |
| 1 teaspoon | anchovy paste |
| 1/2 teaspoon | Worcestershire sauce |
| 1/2 teaspoon | Earthbound Farm Crushed Fresh Chili Pepper Organic Purée |
| 1/4 cup | lemon juice (or up to 1/2 cup total, to taste) |
| 1/4 cup | grated Parmesan cheese |
| 1 cup | mayonnaise |
| 1 1/2 teaspoons | salt |
| 1/2 teaspoon | Freshly ground black pepper |
Whisk all ingredients together in a large salad bowl. Start with 1/4 cup of lemon juice, then adjust to your taste.
Toss with crisp romaine lettuce, crunchy garlic croutons and additional Parmesan cheese, if you like, for a conveniently classic-style Caesar salad.
