Here's a healthy treat that kids are sure to love, especially on a hot summer day. A simple fresh blueberry sauce is mixed with vanilla yogurt and then poured into popsicle molds. If you don't have a mold, use small paper cups. Be sure to allow several hours of freezer time for the popsicles to harden.
| 1 3/4 cups | fresh organic blueberries |
| 3 tablespoons | Sugar |
| 1 tablespoon | fresh lemon juice |
| 1 1/2 cups | nonfat vanilla yogurt |
| 6 small | paper cups and wooden popsicle sticks OR a popsicle mold |
Combine the blueberries, sugar and lemon juice in a small saucepan over high heat and bring to a boil. Reduce the heat to medium-low and cook, stirring frequently, until the mixture thickens, about 10 minutes. Remove the pan from the heat and cool completely.
Place the yogurt in a bowl and add the cooled blueberry sauce, whisking to blend. Pour the mixture into 6 popsicle molds, insert wooden ice cream sticks, and freeze until set, about 4 hours.
