Take one Earthbound Farm Organic Caesar Salad Kit, cook up some bacon and shrimp, toss it all together, and voila! You have a delicious, quick and easy meal!
| 8 large | uncooked shrimp (peeled and deveined) |
| 3 tablespoons | olive oil |
| 2 cloves | garlic (minced) |
| grated zest of 1 lemon | |
| pinch | red pepper flakes |
| 6 | strips thick-cut maple bacon (diced) |
| 1 | Earthbound farm Organic Caesar Salad Kit |
| 1 cup | small cherry tomatoes (halved) |
Place the shrimp, oil, garlic, lemon zest, and pepper in a nonmetallic bowl, cover, and refrigerate at least 1 hour.
Prepare the barbecue at medium heat. Grill the shrimp, turning once, 2 to 3 minutes. Alternately, you can cook the shrimp in a skillet.
Meanwhile, sauté the bacon until crisp and drain on paper towels.
Place the lettuce from the Caesar Salad Kit in a large bowl. Add the bacon, tomatoes, and the contents of the dressing packet. Toss to combine and divide between 2 plates. (Save the croutons for another use.)
Garnish with the shrimp and serve immediately.
