Berry Sauce

Brighten up ice cream, cakes, or mousses with this easy dessert sauce. Any single berry or combination of berries will work. The sauce can be refrigerated for up to 4 days or frozen for up to 3 months.


Ingredients

2 cups frozen (thawed) berries, such as raspberries, blackberries, blueberries, or strawberries
1/3 cup superfine sugar (or to taste)
1 tablespoon fresh lemon juice
1 tablespoon cassis or other berry-flavored liqueur (optional)


Directions

Place the berries, sugar, and lemon juice in a food processor and purée until smooth. If the mixture seems dry, add 1 tablespoon of water.

If you're using seeded berries (such as strawberries, blackberries, or raspberries), strain the purée through a fine mesh sieve set over a clean bowl. Press the solids with a rubber spatula to get all the liquid, then discard the seeds.

Transfer the sauce to a clean container and stir in the liqueur, if using.
