Earthbound Farm Organic Jewel and Garnet Yams (sweet potatoes) are an excellent source of vitamin A, vitamin C and manganese, and a good source of vitamin B6, potassium, fiber, pantothenic acid, copper  and niacin. This bright orange vegetable gets its color from an antioxidant called beta-carotene, which the body converts to vitamin A when needed. As part of a healthy diet, beta-carotene may play a role in reducing the risk of certain chronic diseases. Sweet potatoes are also a rich source of another class of antioxidants called polyphenols that have been linked to potential health benefits.
