Ingredients

  • 1 young coconut
  • 2 cup Earthbound Farm Frozen Organic Strawberries
  • agave syrup

Frozen strawberries combine with nutritious, fat-free coconut water and tender, sweet young coconut to make a delicious and refreshing drink that tastes great any time of day.

Young coconut flesh and coconut water are very mild and not particularly sweet, so the smoothie tastes like strawberries, not coconut. Look for sweet young coconuts in the refrigerated produce section of grocery stores or in Asian markets.

You can also freeze this smoothie, and then enjoy it with a spoon as a sorbet.

Strain the coconut water through a fine-mesh sieve into a 2-cup measuring glass or clean bowl. You need at least 1 cup of coconut water for this recipe. If you don’t get this much from the coconut, add enough cold water to bring the liquid to 1 cup.* Set aside.

Scoop the soft coconut flesh from the shell, discarding any pieces of skin. Transfer the flesh to a blender, and add the coconut water and strawberries. Purée until very smooth, stopping the machine to scrape down the sides once or twice. Taste and add agave syrup to sweeten the smoothie, if desired.

Refrigerate the mixture until it’s cold, then divide into 2 glasses and serve. Alternately, you can freeze the mixture until it’s solid. To serve, remove from the freezer and let thaw slightly before serving with a spoon.

*To make this recipe much quicker, you can use commercially available coconut water and coconut.
