In this hearty skillet recipe, their zesty, earthy flavors really shine. Savory sausage, sweet peppers and tender greens make a satisfying combo that’s easy enough for a busy weeknight supper.
Heat the oil in a large skillet over medium-high heat. Add the onion, pepper and garlic, and cook until the vegetables are soft, about 15 minutes.
Add the sausage, tomatoes and greens. Sauté, stirring frequently, for about 3 to 4 minutes. Season to taste with salt and pepper.
Delicious served with a grain pilaf, a creamy bean purée or a hearty pasta.
