4 ounces Earthbound Farm Organic Baby Spinach
1/3 cup Sundried tomatoes (cut into julienne)
1/2 cucumber (peeled, seeded and diced)
1/4 cup pitted Kalamata olives (chopped)
2 teaspoons fresh oregano (chopped)
  Salt and freshly ground black pepper (to taste)
3/4 cup red wine vinaigrette dressing
 
  RED WINE VINAIGRETTE:
1/2 teaspoon chopped garlic
1 teaspoon chopped shallot
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/2 teaspoon Sugar
1/4 cup red wine vinegar
1/2 cup extra-virgin olive oil
1/4 cup canola oil
  Salt and freshly ground black pepper (to taste)
