3/4 pound tomatoes (cut into wedges)
1 cucumber (peeled and sliced 1/4-inch thick)
  VINAIGRETTE:
3 tablespoons sherry vinegar (or more, to taste)
1 tablespoon mayonnaise
1 tablespoon Dijon mustard
1 tablespoon soy sauce (optional)
1 medium shallot (chopped, optional)
1/2 cup extra-virgin olive oil
  Salt and freshly ground black pepper (to taste)

2 tablespoons extra-virgin olive oil
4 6-oz salmon fillets (skin on, pin bones removed)
