Corn is so naturally sweet it needs little cooking and few ingredients to enhance its delicious flavor. Here it’s sautéed with a few shallots and garlic, a touch of butter and a smattering of fresh dill.
If you haven’t tried dill with corn, you’re in for a treat!
Heat the olive oil in a 10-inch skillet, preferably nonstick, over medium heat. Add the shallots and garlic, and sauté for 2 minutes.
Stir in the corn. Cook, stirring occasionally, for 6 to 8 minutes or until the corn is tender.
Add butter and season to taste with salt and pepper. Add the dill and toss well. Serve hot.
Fresh Variation: Use 2-1/4 cups fresh corn instead of the frozen; sauté for 3 to 5 minutes or until tender.
Vegan Variation: Omit the butter; the dish is still delicious without it.
