This flavorful, creamy (and egg-free) version of the classic Caesar dressing works beautifully as a dressing for all kinds of bold, hearty greens and as a dip for veggies, too. For a yummy entrée-style salad variation, add a bit of chicken, shrimp, salami or bacon (or a combo).
Whisk all ingredients together in a large salad bowl. Start with 1/4 cup of lemon juice, then adjust to your taste.
Toss with crisp romaine lettuce, crunchy garlic croutons and additional Parmesan cheese, if you like, for a conveniently classic-style Caesar salad.
If you're not making your salad right away, refrigerate the dressing, covered, until ready to use.
