Place the mangos, sugar, vinegar, jalapeños, onion, garlic and salt in a large saucepan. Bring to a boil over high heat. Reduce the heat to medium-low and simmer the mixture for 15 minutes. Cool and then refrigerate for up to 1 week.
The sauce can also be transferred into sterilized jars, sealed and processed for canning, if you prefer.
