When we think of spring, watercress and strawberries always come to mind; and this simple salad capitalizes on the bounty of the season. Mild, sweet mâche pairs with peppery watercress for a terrific balance of flavors (or use arugula instead), and fresh tarragon leaves lend a slight anise note that we love. Fresh strawberries and toasted pecans add sweetness and crunch, and our light Strawberry Vinaigrette ties it all together. Go a step further and sprinkle on some crumbled goat or blue cheese, if you like; either goes beautifully with this mélange of ingredients.
Place the mâche, watercress and tarragon (if using) in a large bowl and toss to blend the greens. Add half of the Strawberry Vinaigrette and toss to coat. Add the strawberries and pecans, and toss gently to combine, adding more vinaigrette as desired. Transfer the salad to a large platter or divide among individual plates and serve immediately.
