This delicious, healthy salad has lots of texture and color. Use your favorite vinaigrette dressing and add a note of sweetness with your choice of dried fruit. Be sure to use the celery leaves, if any, as they're full of flavor. The salad tastes best served at room temperature.
Place the wild rice in a large bowl and add the celery, scallions, celery leaves, pecans, and dried fruit. Stir to combine, then add the vinaigrette, tossing to coat the mixture. Season to taste with salt and pepper. The salad can be refrigerated, covered, for up to 2 days.
Note: To obtain 3 cups of cooked wild rice, cook 1 cup of raw wild rice in 4 cups of water over medium-low heat until the water is absorbed and the rice is just tender.
