Spring Mix (or mesclun) is a popular salad mix of assorted tender leaves. At Earthbound Farm, baby lettuces were some of our first crops back when we started farming organically over 25 years ago. We sold our fresh organic baby greens to friends and neighbors, then to local chefs in Carmel and Monterey, CA, who loved the flavor and texture of the tender little leaves. Later we became the first company to launch fresh, pre-washed organic salad greens for retail sale, and we helped start a salad revolution.
Although the ingredients in our mix may vary seasonally, the blend usually contains baby leaves of red and green romaine and oak leaf lettuces, lollo rosa and tango lettuces, red and green chard, mizuna, arugula, frisée and radicchio. The assortment offers a potpourri of appealing colors and shapes, with leaves ranging from emerald green to burgundy, and textures varying from tender to crisp, smooth to ruffled. All of our Spring Mix salad blends have a perfect balance of sweet, peppery, and bitter flavors for enticing salads with delicious depth and complexity.

Earthbound Farm's Spring Mix is an excellent source of vitamin A, vitamin C and iron, which is essential for healthy red blood cells and plays a role in overall energy levels.
Many of the lettuces that make up this blend contain an antioxidant called beta-carotene, which converts to vitamin A in the body, when needed. Within the context of a healthy diet, this antioxidant may play a role in reducing the risk of certain chronic diseases.
