Inspired by the classic Waldorf fruit salad, this version is less sweet and more complex than the original. Smoked turkey adds protein and earthy flavor to a salad that has a reputation as a side dish rather than a starring course. Served on our Harvest Blend Salad of mixed baby greens, garnished with dried cranberries and walnuts, this is a lovely autumn or winter salad. Smoked chicken or ham also work well in place of turkey.
Make the dressing by placing the crème fraîche, mayonnaise, and nutmeg into a small bowl. Whisk to blend.
In another clean bowl, beat the heavy cream with the sugar until stiff peaks form. Fold the whipped cream into the crème fraîche mixture and set the dressing aside while you assemble the salad. The dressing can be made ahead, covered, and refrigerated for up to 3 hours.
Combine the turkey breast, apple, cranberries, grapes, celery, walnuts, and tarragon in a large bowl and toss. Add 2/3 of the dressing and toss to coat, adding more dressing as needed. Season to taste.
Divide the Harvest Blend Salad greens among 4 plates. Top each with a generous scoop of the turkey salad. Garnish each salad with a sprinkling of poppy seeds and the contents of the cranberry and walnut packets from the Harvest Blend Salad. Serve immediately.
