Kiwifruit has a natural affinity for lemon and lime, perfect for the warm days of summer.
This refreshing drink is delicious all by itself, or you can use it as a delightfully different cocktail base for tequila or rum. Control its sweetness by adjusting the proportions of lime and simple syrup to your taste.
To make simple syrup, combine equal parts of water and sugar, bring to a boil, and stir until the sugar dissolves. Store the syrup in a covered container in the refrigerator for up to 2 weeks.
Place the kiwis, lime juice and simple syrup in a blender. Purée until smooth. The tiny seeds of the kiwi are edible, but you can strain the purée, if desired.
Add the crushed ice and blend briefly. Serve immediately.
