Kale + Quinoa + Deliciousness, Oh My!

When we found the amazing Kale & Quinoa Salad with Dates, Almonds & Citrus Dressing at one of our favorite blogs, TheKitchn.com, we thought it was a great way to combine two popular powerhouse foods into a delicious, healthy all-vegetable entrée that’s just right for Salad Month.

  • Quinoa is a complete protein, delivering the 9 essential amino acids that we all need in our diet every day to stay healthy.
  • Kale is an excellent source of vitamins A, C and K, and a good source of calcium, copper, vitamin B6 and potassium, too. It’s rich in antioxidants that can help reduce the risk of some chronic diseases.
  • Kale is also a great choice for people who avoid dairy; it contains 12% of an adult’s Daily Value for calcium.
