We’ve always known that organic cauliflower is a seriously nutritious, surprisingly versatile and just flat-out yummy food.

And now, it’s gaining lots of well-deserved attention as a food trend.

Welcome to the party, everyone! Here are some great ways to enjoy these beautiful creamy white “curds” (that’s what cauliflower’s pretty white florets are called).

In Roasted Cauliflower Tart (from The Earthbound Cook by our co-founder Myra Goodman), crispy, golden brown roasted cauliflower joins sweet caramelized onions in a rich, cheesy custard.
