Organic: Protecting What We Cherish The Best Time for Cauliflower is Now
Cauliflower is often regarded as the most elegant member of the cabbage family — “cabbage with a college education,” to quote Mark Twain. Its rounded, dense, milky florets are wreathed in pale green leaves, which hug the head to shield it from the sun (preventing the development of chlorophyll, which would cause the florets, or “curd,” to turn green).

Today’s cauliflower, however, is no longer exclusively white — and cooking with it has never been more fun! Choosing cauliflower today is like selecting a paint color, with varieties ranging from lime green to violet. It’s widely available year-round, but cauliflower quality is best in the cold months. So this month we’ve got cauliflower in our Seasonal Ingredient Spotlight, along with delicious recipes like Cauliflower Cheese Soup, Barley Salad with Cauliflower, Creamy Cauliflower Risotto, and Marinated Cauliflower Salad, plus selection hints, prep tips, nutritional info, and (of course) more great recipes. Check them out, and leave ratings or reviews for your favorites!

Organic: Protecting What We Cherish Kids and Planet Both Win
When you choose Earthbound Farm organic produce, you’re not just selecting delicious salads, fruits, and veggies grown without troublesome synthetic pesticides and fertilizers, you’re helping protect and preserve the environment for the future. So who better to say “thank you” than the kids whose future is at stake?

Kids (ages 17 and under) who complete the thought: “Thank you for choosing organic — it matters to me because…” in 35 words or less could see their quote on the back of our new salad container labels and win $500 for college AND $500 to protect the environment.

We’ve had 13 winners so far and donated $6,500 in their names to the environmental organizations they’ve chosen, including American Forests, Healthy Child Healthy World, and others. We’re getting ready to announce the next round. Could your child be next? You’ll never know if you don’t enter! (You and your child can enter as often as you like but can only win once. See details on our Contest Rules page.)
