At Earthbound Farm, we don’t ever get tired of talking about organic fruits and veggies. That’s why we wanted to reach out to some of our favorite eaters to see how they select, prepare and enjoy Nature’s bounty…and get their thoughts on some of our more burning questions.

To kick off this tasty feature, we turned to our one of our most favorite foodies, our co-founder Myra Goodman. Pull a chair up to the farm table as we dish up the details on Myra’s favorite ways to feast! Fresh Feast: When we say “Kale,” you say…?

Myra Goodman: Kale Caesar Salad – yum!

FF: What’s your favorite way to get your greens?

Myra: My daily salad – can’t bear to skip it. I’m dependent on the filling freshness and nutrients of a big salad!

FF: What’s most important to you when choosing products and ingredients?

Myra: Products and ingredients must be organic, flavorful and if they are animal products, they must be humanely raised.

FF: Which season’s harvest provides the most inspirational ingredients for you?

Myra: Early fall. The best of the late summer produce is still available like tomatoes, corn, berries and gorgeous greens, and a fresh crop of apples and winter squash also start to appear!

FF: Do you buy Earthbound Farm products in the store? If so, which ones?

Myra: I buy them all – salads, veggies and fruits! I seem to rotate my favorite salads, but right now, I’m back to our original Spring Mix.

FF: What is your current go-to recipe resource?

Myra: It might sound a little silly, but I usually open one of my own cookbooks. They are collections of some of our family’s most favorite dishes, so it just makes sense!

FF: Have you experienced a recent culinary disaster?

MyraSadly, yes. I burnt some yam fries in the oven. I turned up the heat in hopes that they would be finished at the same time as our entree coming off the grill, but after just a few minutes, they were black on the bottom.

FF: What is the kitchen utensil that you cannot live without?

Myra: My amazing knives!

FF: What’s your favorite #MeatlessMonday meal?

Myra: Falafels! My daughter Marea and I included our favorite falafel recipe in our new cookbook, Straight From the Earth.

FF: Finally, we have to ask, what did you have for breakfast this morning??

Myra: 100% dense rye bread with Humbolt Fog goat cheese.
