Blackberry Fool
Serves 8

Executive chef-owner Todd Fisher shares this signature dish from his Hullabaloo restaurant in Salinas. Raspberries or strawberries can be substituted for the blackberries, but use fresh berries for optimum flavor.



4 half-pints fresh blackberries

1-1/2 cups confectioner's sugar, divided

4 cups whipping cream

2 tablespoons white or golden balsamic vinegar

8 sprigs fresh mint

1/2 pint fresh blackberries, as garnish (optional)



Combine the blackberries and 1/2 cup of the confectioner's sugar in a bowl. Set aside.

In the bowl of a mixer, combine the whipping cream and another 1/2 cup of the sugar. Beat until stiff peaks form. Add half the blackberries to the cream and continue mixing until well blended.

In another small bowl combine the vinegar and the remaining 1/2 cup sugar. Add to the bowl with the remaining berries and stir to blend.

Spoon some of the berry cream into each of 8 parfait or martini glasses. Add a layer of berries and cover with more cream. Continue to layer in this manner, ending with cream. Garnish with mint sprigs and, if desired, a sprinkling of fresh blackberries.
