Fava Beans with Pine Nuts and Bacon
Serves 4
Bacon adds a smoky element to the sweet, earthy taste of fresh fava beans, and toasted pine nuts contribute nutty flavor and crunch. Although this recipes calls for oregano, feel free to use basil, thyme, or dill instead.

1 slice bacon, cut into 1/2-inch dice
1 teaspoon extra-virgin olive oil
1 clove garlic, minced
1 tablespoon white wine (a variety you'd like to drink)
2 cups shelled and peeled fresh fava beans (from about 4 pounds of pods)
1 teaspoon chopped fresh oregano
Sea salt and freshly ground black pepper, to taste
2 tablespoons toasted pine nuts
Place the bacon and olive oil in a medium-size skillet and cook over medium-low heat, stirring occasionally, until the bacon is crisp. Add the garlic and cook 1 minute, taking care not to let it burn.
Add the white wine, fava beans, and oregano, and cook until the favas are heated through, about 2 minutes. Season to taste with salt and pepper.
Transfer the favas to a warm serving bowl and sprinkle with the pine nuts. Serve hot.
