Mango Salad Dressing
Serves about 1-1/2 cups

This light, fat-free dressing brings a taste of the tropics to your salads. It also complements chicken, duck, and shrimp beautifully and can be used as a marinade, as well.



1 large mango, peeled, pitted, and cubed

1/4 cup freshly squeezed orange juice

1/2 teaspoon grated orange zest

2 tablespoons fresh lime juice

2 tablespoons cider vinegar

1 tablespoon honey, or more to taste

1 teaspoon grated fresh ginger

Salt and pepper to taste



Place the mango, orange juice and zest, lime juice, vinegar, honey, and ginger in a blender or small food processor. Purée until the mixture is smooth. Season to taste with salt and pepper, and add more honey if your mangos aren't sweet. Refrigerate up to 2 days.
