Date Shakes
Serves 2 cups
Southern California is the home of the date shake, a concoction that's believed to have originated in the Palm Desert area during the Second World War. Roadside stands devoted to date shakes were once ubiquitous, but with the advent of superhighways, many of them have disappeared.
If you have fond memories of this classic treat, here's a simple recipe you can make at home. The dates never purée completely, so the shake has soft, chewy bits that add sweetness and texture to the drink.

1/3 cup thinly sliced, pitted Deglet Noor dates (about 9)
1 cup milk
2/3 cup vanilla ice cream
3/4 cup ice cubes
Place the dates in the bowl of a small food processor and pulse until finely chopped. Add about 1/4 cup of the milk and run the processor for 1 minute. Add the remaining milk, ice cream, and ice cubes and process until the mixture is thick and smooth. Serve immediately.
