Cranberry Granola Bars
Serves 12 bars

If you like energy bars, give this recipe a try. Chewy and not too sweet, these snacks are studded with healthy seeds and fruit; they make a perfect treat for hikes or lunchboxes. If you like intense orange flavor, add 1/2 teaspoon of pure orange extract and the grated zest of 1 orange to the mixture.



2 large eggs

1/3 cup (packed) light brown sugar

1 teaspoon vanilla extract

1 1/2 tablespoons canola oil

1 teaspoon ground cinnamon

1 cup Earthbound Farm Organic Dried Cranberries

1-1/2 cups lowfat granola

1/4 cup raw unsalted sunflower seeds

2 tablespoons sesame seeds

2 tablespoons sliced almonds

2 tablespoons toasted wheat germ



Position a rack in the lower third of the oven, and preheat to 325 degrees F. Generously butter a 7x10-inch baking pan and set aside.

Whisk the eggs with the sugar in a large bowl. Add the vanilla, oil, and cinnamon, and whisk until smooth. Stir in the cranberries, granola, seeds, and wheat germ. Transfer the mixture to the prepared pan and spread into an even layer. The mixture will be wet.

Bake until the mixture turns golden brown, 25 to 35 minutes. Remove from the oven and let cool in the pan for 15 minutes. Loosen the edges by running a knife or spatula around the perimeter of the pan, then cut with a serrated knife into squares. Let cool completely before removing the bars from the pan. Store in an airtight container for up to 1 week.
