Berry Sauce
Serves 1 cup
Brighten up ice cream, cakes, or mousses with this easy dessert sauce. Any single berry or combination of berries will work. The sauce can be refrigerated for up to 4 days or frozen for up to 3 months.

2 cups fresh or frozen (thawed) berries, such as raspberries,
blackberries, blueberries, or strawberries
1/3 cup superfine sugar, or to taste
1 tablespoon fresh lemon juice
1 tablespoon cassis or other berry-flavored liqueur, optional
Place the berries, sugar, and lemon juice in a food processor and purée until smooth. If the mixture seems dry, add 1 tablespoon of water.
If you're using seeded berries (such as strawberries, blackberries, or raspberries), strain the purée through a fine mesh sieve set over a clean bowl. Press the solids with a rubber spatula to get all the liquid, then discard the seeds.
Transfer the sauce to a clean container and stir in the liqueur, if using.
