“Winter squash” is actually used for myriad varieties of sturdy, hard-skinned squashes that are a rich source of nutrition. The butternut is the most common all-purpose winter squash, with a distinctively long neck, bulbous bottom and smooth, relatively thin pinkish-beige skin; its firm orange flesh is sweet with a hint of nuts, and its creamy texture makes it perfect for many different kinds of recipes.
