Meatloaf

“I remember my first apartment and my first attempts at cooking. I wanted to impress my then-boyfriend by making my mother’s meatloaf. I wound up patting the milk-soaked bread mixture on top of the meat instead of mixing it in! To this day my mother teases me about my ‘meatloaf en croute’! The funny thing is that it didn’t matter to my boyfriend at all — he devoured half of it in one sitting! I have since adapted the original recipe from 3 pounds of ground chuck to a combination of 1 pound ground chuck, 1 pound ground turkey, and 1 pound ground buffalo to keep the meaty flavor but make it healthier.”
